Golden Glow Cauliflower & Lentil Soup

 

A light and nourishing soup perfect for the evening when digestion (Agni) is naturally weaker. Having a lighter meal at night supports better sleep, allows the body to rest instead of working hard to digest heavy foods, and promotes overall gut health.

Not only is this comforting soup easy to make but it’s easy on digestion while still being satisfying and grounding. Perfect for winding down at the end of the day. Try it with different seasonal vegetables for variety and freshness.

Serving – 2

 

Ingredients

 

1-2 tbsp ghee

¼ tsp mineral salt

⅓ tsp fresh ginger, grated

½ tsp coriander powder

4-5 curry leaves

⅛ tsp black pepper

½ tsp turmeric

¼ cup brown lentils

1 cup water

Squeeze of lime or lemon

½ cup cauliflower, chopped

 

Optional

Basmati rice

1 cup sweet potato, chopped

 

Method

 

  1. 1.    Heat ghee in a small pot over medium heat.

    2.    Add salt and fresh ginger, sautéing until fragrant.

    3.    Stir in coriander, curry leaves, turmeric, and black pepper—let the spices bloom.

    4.    Add lentils, coating them in the spiced ghee before tossing in the cauliflower and sweet potato.

    5.    Simmer for a few minutes, letting the flavours meld.

    6.    Pour in water, bring to a boil, then cover and reduce to a simmer for 25-30 minutes.

    7.    Finish with a squeeze of lime or lemon and let sit for 5 minutes.

    8.    Blend or mash to your preferred consistency.

    9.    Serve warm over rice and baked sweet potato or pumpkin.

 

Dosha Adaptation Guide

 

VATA – Perfect for Vata, offering warmth and nourishment to balance dryness and coldness. Add extra ghee and a pinch of extra ginger for additional grounding.

PITTA – For Pitta, reduce the ginger and black pepper, and use coconut oil instead of ghee to cool down excess heat. A touch of fresh coriander or a squeeze of extra lime can add a refreshing balance.

KAPHA – Kapha may find this soup slightly heavy, so reduce the ghee, add extra black pepper, and use more ginger to stimulate digestion and bring in lightness. You can also add a pinch of mustard seeds for extra warmth.
