Rose Goddess Cookie

Ingredients
1/3 cup whole wheat flour
1 tbsp ghee
1 tsp sweet almond oil
1/2 tsp tahini (not much, just for depth.. or have without and use extra sweet almond oil)
1 tbsp maple syrup (adjust for sweetness)
1/8 tsp mineral salt
1/2 tsp cinnamon
1/8 tsp nutmeg
1/4 tsp cardamom
1/2 tsp fennel seeds (lightly crushed)
1/2 tbsp chopped pistachios
dried rose petals (plus extra for garnish)
1-2 tsp warm water (as needed to bind the dough)
Method
Preheat oven to 175°C (350°F) and line a baking sheet with parchment paper.
In a small bowl, mix the flour, spices, fennel seeds, salt, and chopped pistachios.
then add the ghee, almond oil, tahini, and maple syrup until smooth.
Gradually mix, adding warm water 1 teaspoon at a time until a soft dough forms.
Gently fold in the rose petals, keeping some for garnish.
Shape the dough into one large cookie (or two small ones) and place on the baking sheet.
Bake for 10-12 minutes, until lightly golden.
Let cool for a few minutes, then sprinkle with extra rose petals before serving.
Dosha Adaptation Guide
VATA – Add extra ghee for nourishment and moisture. Include a pinch of saffron for a grounding, nervous system tonic. Serve warm with a cup of spiced herbal tea.
PITTA – Reduce cinnamon and nutmeg, and add extra cardamom for cooling effects. A splash of rose water enhances the soothing properties. Opt for coconut oil instead of ghee.
KAPHA – Use less ghee and tahini, and substitute part of the flour with almond/flax meal for a lighter texture. Add extra ginger and black pepper to boost digestion and warmth.
