mossy green goddess pasta
This dish is a nourishing, flavour-packed hug in a bowl… perfect for when you want something grounding yet vibrant. Sweet potato (or pumpkin) brings a sweet earthiness, halloumi adds that irresistible golden-chewy bite, and the kale-based Green Goddess sauce ties it all together with creamy, herby goodness.
i promise you Every forkful is a mix of textures and flavours mmmmm salty olives, tangy sundried tomatoes, silky pasta, and warm spices. It’s satisfying without being heavy, and you can adapt it to suit your dosha and needs for even better balance.
note that i dont usually measure things and just wing it so have a play around with the ingredients below, listen to your intuition, and have fun!

Ingredients
pasta of choice
halloumi
sundried tomatoes
olives
sweet potato or pumpkin
ghee
cumin seeds
mustard seeds
salt
water
for the sauce
kale
1/4 cup pumpkin seeds
1/4 cup sunflower seeds
1/4 cup cashews
1 tbsp tahini
1-3 tbsp olive oil
splash of lemon or lime
cumin powder
coriander powder
salt and pepper
water
Method
soak the nuts and seeds for a little in warm water so they soften
strip the stems from the kale and give it a wash
steam the kale so it softens (raw kale is very hard to digest)
add all the ingredients for the sauce into the blender and blend until smooth. you may need to add more oil or water depending on the consistency - explore!
put the sauce aside
heat the ghee or olive oil in a fry pan
add the cumin and mustard seeds and salt
in a separate pot, boil some water for your pasta
once an aroma has emerged in your fry pan, add the chopped sweet potato or pumpkin and toss and cook until soft
once cooked, move the sweet potato or pumpkin to a bowl then add the chopped halloumi to the fry pan
once the halloumi starts to brown on one side, flip them over
in the meantime, add your pasta to the pot of boiling water and cook as per the packet instructions
once the pasta is done, drain and then put the green goddess sauce into the pot with the pasta and mix
then add in the sundried tomates, olives and sweet potato or pumpkin
mix and then add to a bowl and top with the halloumi
go and sit down somewhere comfy, remove any distractions and eat slowly - explore all the different flavours and groove
Dosha Adaptation Guide
VATA – Perfect as is. Add extra ghee for deeper nourishment and enjoy it fresh and warm. A sprinkle of extra cumin powder can make it even more grounding.
PITTA – Swap ghee for olive oil, go lighter on mustard seeds and cumin powder, and add more lemon juice to the sauce for a cooling edge. Use pumpkin instead of sweet potato for less heat.
KAPHA – Use less ghee, swap pasta for a lighter grain-free pasta or zucchini noodles, and add extra mustard seeds and a pinch of fresh ginger for warmth. Keep the olives moderate and enjoy straight from the pan while still hot.
