Rose-Infused Ayurvedic Immunity Truffles

Infused with the ancient vitality of chyawanprash (herbal jam), the grounding comfort of creamy pistachios, the caramel sweetness of medjool dates, and pinches of cinnamon, vanilla, and rose… each truffle is rolled in a dreamy coat of coconut, delicate rose petals, and golden turmeric. Like little jewels in your kitchen, they’re as beautiful as they are nourishing.

Chyawanprash brings immunity support, lung nourishment, and whole-body rejuvenation. Dates bless you with natural energy, pistachios bring gentle strength, ghee supports digestion, and rose water soothes the mind while opening the heart.

Serving – 8 balls

 

Ingredients

 

1 cup pistachios

8–10 medjool dates, pitted

1 tbsp chyawanprash*

1/2 tbsp ghee

½ tsp rose water (or to taste)

a lil drop or two of maple syrup if you like it extra sweet

½ tsp vanilla extract

½ tsp cinnamon

Pinch of mineral salt

*if you can’t get your hands on chyawanprash, you’re kind missing out hehe but you could replace it with peanut butter or tahini? lmk if you try it that way and if its still yummy!

 

for rolling

 

2 tbsp desiccated coconut

1 tbsp dried organic rose petals, crushed

½ tsp ground turmeric

 

Method

 

  1. Prepare your coating: In a shallow bowl, combine the coconut, rose petals, and turmeric. Set aside.

  2. Blend the base: In a food processor or blender, pulse pistachios until finely ground. Add pitted dates, chyawanprash, ghee, rose water, vanilla, cinnamon, and salt. Blend until mixture forms a sticky dough.

  3. Shape: Scoop out small portions and roll into 8 balls between your palms. not gonna lie but i definitely was licking the blender bowl haha!

  4. Set: Place in a container and freeze for 10–15 minutes to firm up.

  5. Roll & coat: Gently roll each truffle in the coconut-rose-turmeric mixture until evenly coated. you can store in the fridge for up to 5 days but good luck with making them last that long!

  6. Serve mindfully: go sit down, get comfy, Eat slowly, savouring the layers of texture, scent, and flavour.

Dosha Adaptation Guide

 

VATA – Perfect as is. Add extra ghee for deeper nourishment, and enjoy warm from your hands with a calming herbal tea.

PITTA – Use less cinnamon and turmeric, add more rose petals for cooling, and keep ghee moderate. Store in the fridge and enjoy slightly chilled.

KAPHA – Reduce ghee, increase turmeric, and add a pinch of ginger powder to the mix for circulation. Limit dates slightly to keep them lighter.
