Amaranth + Pistachio Bliss Bars - no bake!
my oh my these lil bliss bars are an absolute delight!
They’re chewy, lightly crunchy, naturally sweetened, and filled with beautiful ingredients like puffed amaranth, hemp seeds, pistachios, dates, coconut, and carob. The lime zest adds the dreamiest fresh brightness while the nut butter and coconut oil create that soft, grounding texture that feels so satisfying without being heavy.
I’ve been loving one of these bars in the afternoon with warm herbal tea or after a light breakfast when I want something sustaining and comforting. They feel playful and indulgent while still being incredibly wholesome.
Serving – Makes 10–12 bars
Ingredients
1 cup puffed amaranth
1/2 cup hemp seeds
1/2 cup unsweetened shredded coconut
1/2 cup shelled pistachios, finely chopped
1/2 cup dried cranberries or goji berries, preferably juice sweetened
2 teaspoons lime zest
4 pitted Medjool dates
1/4 cup almond or nut butter
1 tablespoon coconut oil
1/4 tsp cinnamon powder
1 tablespoon honey
1 teaspoon vanilla extract
1/2 cup carob buttons, chopped and refrigerated
A pinch of mineral salt

Method
Line a baking dish or small tray with parchment paper and set aside.
use a small pan to melt the Medjool dates (smush em up), cinnamon, almond butter, coconut oil until warm, smooth and sticky.
Allow to cool then add vanilla and lime zest.
In a large mixing bowl, combine puffed amaranth, hemp seeds, shredded coconut, chopped pistachios, dried cranberries or goji berries, and some mineral salt.
Pour the wet mixture into the dry ingredients and stir gently until everything is evenly coated and beginning to stick together.
Fold through the chilled chopped carob buttons at the very end so they stay chunky and don’t melt.
Transfer the mixture into the lined baking dish and press down firmly using damp hands or another piece of parchment paper. Really compact it so the bars hold together beautifully.
Place into the fridge for 2–4 hours to set.
Once firm, lift from the tray and slice into bars with a sharp knife.
before enjoying, pause for a sweet lil moment ♡ take a deep breath through the nose and soften your shoulders. Notice the colours, textures, and aroma. Nourishment becomes even more powerful when received slowly and lovingly.
These bars store beautifully in an airtight container in the fridge for up to 5 days.
Dosha Adaptation Guide
VATA – Add an extra tablespoon of almond butter or a little melted ghee for more grounding and moisture. Use sweet dried cranberries rather than tart goji berries. Enjoy slightly softened at room temperature with warm cinnamon or chamomile tea.
PITTA – Use coconut butter or sunflower seed butter instead of roasted nut butter for a more cooling effect. Reduce the lime zest slightly if sensitive to sour flavours. Goji berries and carob are especially lovely here. Enjoy with rose or mint tea.
KAPHA – Reduce the coconut slightly and add a pinch of dry ginger or cinnamon for warmth and digestive support. Tart cranberries work beautifully here. Enjoy alongside warm ginger tulsi tea for a light, uplifting snack.
